We offer a few different options: 1/2 pound or 1/4 pound each of 4 varieties of garlic for which we have limited quantities. Please note the garlic varieties included may change depending on availability.  Each type represents a different facet of the garlic genome: Inchelium Red - Inchelium is an artichoke softneck variety. This mild-flavored garlic is great baked. Pretty and productive a softneck originally cultivated by the Colville Confederated Tribes in Washington. As with most soft necks Inchelium stores very well for 6–9 months. Pretty purple coloring over white bulb wrappers conceal 12-15 large plump cloves. Grows to 3 1/ 2"! Inchelium grows very well in our bioregion and was adapted as Applegate Red - a major part of the Siskiyou Purple lineage. Chesnok Red - Hardneck variety. In a prevalent Russian dialect, "Chesnok" means garlic, although this garlic originally hails from the village of Shvelisi in the Republic of Georgia.  It is an excellent producing, brilliant garlic. Long, crescent-shaped purple-hued cloves are covered by purple-striped bulb wrappers that glow with sparkles of golden glaze. Outstanding, uniquely spicy flavor raw. Holds flavor well when baked. Very long storing garlic. 8-12 cloves per bulb.  Basque - This is a very pretty hardneck Turban type with flattened bulbs with purple striping from Basque Country in the in the autonomous province of Navarre (Nafarroa), Northern Spain. It has a quick heat when eaten raw, fading into an earthy finish. In the Basque language garlic is “baratxuri”. We originally obtained this variety via our local garlic wizard, Avram Drucker of Garlicana. Mt St Helens - A softneck silverskin large family heirloom. Mt St Helens in bred in Washington State and has large cloves, mild flavor and is an excellent keeper. This variety may last you the whole year, until your next garlic harvest in proper storage conditions. An excellent choice for braiding due to long pliable stems and bright white hue. Large pearly white bulbs with cloves consistently larger than other silverskin types. Mild garlic flavor when cooked and spicy when raw! Of the first generation progeny of Kishlyk, this one has the darkest green, most upright, fibrous leaves.  Large bulbs with 8-12 cloves, more symmetrically configured than its parent, it has complex flavor and a good bite without being searingly spicy or bitter. Very pretty deep purple striping over white bulb wrappers with bronze to red cloves.  The cloves are tall and elongated and are easy to peel. Produces 4-8 large, easy to peel cloves per bulb. Raw Flavor is spicy and builds to a fiery intensity.  Baking and cooking mellows flavor to a nutty smoothness. The visual appeal, ease of peeling and robust flavor have endeared this variety to many growers who now treasure it as a favorite.  Romanian Red - Romanian Red Garlic is a late-season, Porcelain Hardneck type. Truly impressive in every way, each bulb contains 4-6 large cloves, delivering a hot and pungent flavor that lasts. Its popularity stems from its robust growth, hardiness, and high allicin content, as well as the easy-to-peel cloves and unique streaked purple-red skin. The heads are wrapped in silky, creamy white and have excellent storage capabilities. Originally from Romania, this garlic has great market appeal for its size, taste and quality. Turban, Hardneck Certified Organic by Oregon Tilth This is a very pretty hardneck Turban type with flattened bulbs with purple striping from Basque Country in the in the autonomous province of Navarre (Nafarroa), Northern Spain. It has a quick heat when eaten raw, fading into an earthy finish. In the Basque language garlic is “baratxuri”. We originally obtained this variety via our local garlic wizard, Avram Drucker of Garlicana. Here in Southern Oregon, where they are some of the first to emerge and earliest to mature, the scapes seldom have time to coil before the plants are ready to harvest meaning that the lack of fiber in the leaves, makes them are ideal for garlic greens pesto and well suited for early greens production.  In addition to the northern latitudes, Basque, grows well in warmer climates and more southern latitudes. Turban garlics are highly adaptable to different climates having been found from tropical Southeast Asia to arid Central Asia, to the Pyrenees and surrounding lowlands.  Very easy to peel. Creole type Certified Organic by Oregon Tilth Donostia has a wonderful full bodied flavor and an exceptionally long storage capacity of 10-12 months! This is a very handsome, long storing Creole type was originally sourced from a market in Donostia, Euzkadi, aka San Sebastián, Spain. Creole type garlics are known to be adaptable and tolerant to adverse conditions. Bulbs are satin white over pink clove wrappers.  Most bulbs will have only 4-6 cloves, saving time in the kitchen.  Flavor is rich and bold with just the right amount of spiciness. Stores fairly well for a hardneck, lasting until March or April in simple cool storage. Another bonus of this variety is that it produces scapes (see photo), which are false flower stalks that can be used as a sort of green garlic (think bunching onions) in April and May.  It is best to break these scapes off as it helps make for larger bulbs instead of the plant putting its energy into making these false flowers that produce small bubils. Although this variety is a bit more difficult to grow than softneck varieties in so far as it is more sensitive to weed pressure and water inconsistency, it is such a joy to use in the kitchen that it's worth the extra effort.  It is capable of growing to 3.5" in diameter with 5-8 large cloves per bulb. Artichoke, Softneck Type Certified Organic by Oregon Tilth We have been growing, selecting and perfecting this beautiful softneck variety for over 20 years. This strain originated as 2 similar varieties: Lorz Italian & Applegate Red. After years of sorting it emerged as something new and unique, deserving a new name!  This strain is from the Artichoke subgroup of garlic, which possess the general characteristics of a soft flexible neck, purple tint/blush to the outer wrappers and clove wrappers.  Whereas some artichoke types can have up to 30 cloves, our strain usually has 8-15 cloves per bulb.  This means less small inner cloves that are more difficult to deal with in the kitchen!  Of all of our varieties, this is the easiest to grow to large size.  It can attain a diameter of 3 1/2 inches! Purple Stripe, Hardneck Certified Organic by Oregon Tilth Zemo Mtsara aka Verchnyava Mcara is a purple stripe hardneck variety that came to us through Garlic Steward, Avram Drucker at Garlicana. This is this spiciest variety we grow!  White wrappers with vibrant reddish clove coloration and complex flavor characterize this cultivar from Abkhazia. Located NW of the Republic of Georgia. Certified Organic by Oregon Tilth French Grey Shallots (aka Griselle) are considered true shallots, as they can only be propagated from bulbs. These sought after delights are said to have a more refined flavor than those grown from seed. Chefs prize them for their delicious umami flavor. Their flesh is delicately pink-purple and size ranges from 1-2". Grey shallots are hardy in ground in heavy freezes. They do not store as well as Dutch Red Shallots (about 3-5 months). ~35 cloves per pound.  A pound of this variety will give you 35-45 plantable cloves of shallots, enough to plant a 25-foot row or 10 feet of a 3-foot-wide garden bed.
